The mandi run at 4AM isn't a marketing story. It's baked into the name itself. We go to the wholesale market before the city wakes up because that's when the produce is freshest โ and because your morning deserves the real thing.
We started in Varanasi because this city understands ritual. The morning puja, the Ganga aarti, the chai at the ghat โ mornings here are sacred. We wanted to add one more ritual worth keeping.
